Mushroom Omelette

INGREDIENTS

200 gms mushrooms

4 eggs

2 tbsps chopped parsley

seasoning

200gms tomatoes

Butter for frying

METHOD

Saute chopped mushrooms in butter, add parsley. Remove from pan. Heat more butter, add beaten eggs , when starting to set, add mushroom, parsley and seasoning. Serve with grilled tomatoes.
