BHARUCHI SCRAMBLED EGGS

Ingredients

● 8 eggs

● 400gms potatoes peeled and juilienned

● salt to taste

● 6 tbsp butter or ghee

● 4 B onions chopped

● 4 green chillies seeded and chopped

● 2 tbsp coriander leaves chopped

● 5 cloves garlic

● 1 inch piece ginger.

Method

Heat fat and fry potatoes till pale golden and crisp. Remove from flame and drain well. Add chopped onions and fry till golden brown. Add chopped ginger and garlic and sauté for a few mins. Add coriander leaves. Salt to taste and well beaten eggs. Cook till just done. Remove from flame and add fried potatoes.
